How to choose
- German or Japanese, not both. German steel (Wüsthof, Zwilling) is heavier, tougher and forgiving. Japanese steel (Shun) is harder, sharper and chips if you twist it. Pick by how carefully you cook.
- Three knives do ninety percent. Chef, paring, serrated. A fifteen-piece block is lovely, but it's mostly a display object built around those three.
- The board matters as much as the blade. Cutting on glass, stone or bamboo dulls a knife within weeks. End-grain walnut lets the edge slide between fibres and keeps it sharp for months.
