How to choose
- Bonded, not coated. Look for three or five layers of metal bonded through the whole pan, not a coating sprayed on top. Coatings wear out; bonded metal doesn't.
- Buy the pieces you use. A 10-piece set with two pots you never touch is worse value than five pieces you reach for daily. Count the pans in your sink this week.
- Enameled cast iron is decor too. It goes stovetop to oven to table, so it earns its counter space twice — as equipment and as the thing people notice.
